- Preheat the oven to 350°F (175°C).
- In a bowl, mix olive oil, paprika, garlic powder, onion powder, thyme, salt, pepper, and cayenne (optional).
- Pat the turkey drumsticks dry, then rub them thoroughly with the spice mixture.
- Line a baking sheet with foil or parchment and arrange the drumsticks with space between them.
- Roast for 1.5 to 2 hours, flipping halfway through for even cooking.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before serving for juicier results.
Notes
For crispy skin, increase oven temperature to 400°F (200°C) for the final 10–15 minutes. You can also grill the drumsticks for a smoky flavor, or slow cook for fall-off-the-bone tenderness. Add honey or maple glaze in the last 20 minutes for a sweet twist.
Serve with mashed potatoes, grilled veggies, or salad. Store leftovers in the fridge up to 3 days or freeze up to 3 months.
